General Summary
Provide
support to the Eagle Nutrition Services (ENS) Clinic Director by acting as ENS supervisor and mentor students in the Dietetics Coordinated
Program (CP).
ENS is a nutrition counseling and body composition testing clinic that offers services to the campus and local
community. Through ENS, the CP is able to provide dietetic students with experience in community nutrition and
entrepreneurship.
Principal Duties and Responsibilities
- Perform nutrition counseling and body composition
testing (i.e. DXA and BIA) to clients, completing necessary charting using clinic templates and the Nutrition Care Process. - Provide
support and guidance by acting as a preceptor to CP students and provide evaluation of their work. - With the involvement of
dietetics students, plan and provide cooking demonstrations, and maintain ENS Demonstration Kitchen space. - Provide community
outreach to EMU students, employees, and area residents. - Perform clinic tasks such as: answering phones, client scheduling, payment
processing, data entry and analysis, deposit of funds, and maintenance of ENS social media. - Assist in demonstration kitchen rentals
by collecting paperwork and payment, provide supervision during rentals, and ensuring ServSafe safety measures are being followed. - Provide occasional support for the CP, such as compiling documents needed for accreditation, assisting with recognition ceremonies, and
similar tasks. - Conduct literature searches and maintain evidenced-based practices..
- Assist with the preparation of
professional presentation materials and creation of client handouts/resources. - Collect and analyze ENS and program
data. - Assist in conducting research, and develop grant and manuscript writing, when applicable.
- Other duties as
assigned.
Minimum Qualifications:
Must be a Registered Dietitian/Registered Dietitian
Nutritionist.
Must be ServSafe certified, or become ServSafe certified within 60 days of starting this role.
A valid driver’s
license is required.
Supervision Exercised:
Supervise CP students both in ENS and while at off-site
events.
Act as Clinic Supervisor when ENS Clinic Director is out of office.
Supervision Received:
Work under the direction of the ENS Clinic Director, the CP Director(s), and the School of Health Sciences School Director.
Working Conditions:
Occasional travel to local communities may be required.
Typical hours of
operation for ENS are Monday through Friday 8am to 5pm, but occasional evening and weekend hours will be required.
